The Ganache family in the formulator. What it covers, how many canonical recipes there are and what's guaranteed.

What it is

The Ganache family in the formulator groups together fillings based on a cream-chocolate emulsion, with liquor and alcohol-free variants. It's the most mature family in the module.

What it covers

  • Over a hundred canonical recipes reviewed by a chef: base variants, liquor versions and combinations fine-tuned afterward.
  • Average output score ~95 out of 100.
  • Typical water activity (aw) range: 0.76 – 0.82.
  • Typical water range (%): defined by subtype and flavor.

How to invoke it

Sidebar → Filling formulator → Step 1: click the Ganache card. Since it's the only visible option in its category, the wizard auto-selects the subtype and jumps straight to Step 2 (flavors). Continue with flavor, weight and constraints as in Generate a filling.

What's guaranteed

  • The recipe uses a controlled vocabulary (for example, UHT cream 35% fat always, instead of inconsistent variants).
  • The result meets the physicochemical ranges signed off by a chef for the Ganache family.
  • If your combination has flavor + liquor (for example, raspberry + framboise), the engine will prefer a liquor variant from the catalog and adapt it to your weight.
  • If it can't converge, the 12 credits are returned.
