Your first filling with AI
Generate a balanced ganache with the Filling formulator, scene by scene, in a few minutes.
Goal
Generate a complete, technically validated ganache recipe with the Filling formulator in a few minutes.
Before you start
- Have an active account.
- Have 12 credits in your balance (that's what each formulation costs). If the generation fails, they're refunded automatically.
Steps
Open the Filling formulator
In the sidebar, under FORMULATION, click Filling formulator (route /filling-formulator). The wizard moves forward one scene at a time; in each one you click Next, and chips at the top let you go back and change the type, flavors, or amount.
What filling do you want to create?
Choose the family. There are five today: Ganache, Caramel, Pâte de fruit, Praline & gianduja, and Truffle. When a family has more than one type, Pick the specific type appears; Ganache has a single type, so selecting it is enough.
In a hurry? Start with the classic sets up the classic configuration — ganache · one flavor · 1 kg — and only asks you for the flavor.
How many flavors will your filling have?
Choose the structure: One flavor, Two flavors, One flavor + accent, or Two flavors + accent. For a first try, One flavor is the simplest.
Choose your flavors
In Your primary flavor, search for a flavor or browse the flavor families (for example, raspberry) and select it. Depending on the structure you chose, also fill in Your secondary flavor and Your accent (a finishing note, like flaky salt or a spice, dosed in grams). If you like, add Additional notes (optional): qualitative guidance for the engine, for example "boost acidity" or "no alcohol".
How much filling do you need?
Choose the total weight: 500 g, 1 kg, 2 kg, 5 kg, or Other (from 50 to 5,000 g; 1 kg by default). If you like, expand Advanced constraints (optional) and set the Diet (Vegan, Gluten-free, Lactose-free, No refined sugar), Min cocoa %, and Max water %.
Review your recipe and create it
The Review your recipe scene sums up your choices (you can edit each block) and shows what it costs: "Uses 12 credits · Balance: [n]". Click Create my recipe. You'll see We're creating your recipe with four phases ("Preparing your ganache", "Choosing the ingredients", "Balancing the formula", "One final check from the master"). You can close the window: we keep working on the recipe and it will be waiting for you. If you change your mind, Cancel this recipe returns your credits.
Expected result
The Your recipe is ready screen, with:
- Ingredient list with each weight in grams and its percentage of the total.
- Recipe score, showing how many parameters are in range and how many are out, with details of any outside the recommended range.
- Physicochemical balance: a chart of water, sugars, other fats, and cocoa butter fat against their optimal range (for soft caramel, total fat and sugar block), plus the water activity estimate with the guidance shelf-life reference from the course table.
- Under the recipe name, the storage guideline: "Storage: at room temperature, between 16 and 18 °C".
- Master chocolatier notes.
- The cost of the operation: "−12 credits · remaining balance: [n]".
The recipe is already saved in My recipes: you don't need to click anything to save it. From here you can click View recipe (opens the editor), Adjust (goes back to the scenes to change something), or Create another recipe.
The estimated properties (water activity, pH, shelf life) are guideline calculations, not lab measurements. Real shelf life depends on hygiene, raw materials, process, enrobing and how the pieces are kept. Validate the formula with your own tests; for sale, with aw/pH measurement.
Common issues
| Symptom | Cause | Fix |
|---|---|---|
| "We haven't mastered that combination yet" screen | That type and flavor combination isn't in the curated recipe library yet. | Click Try another combination and use a more classic flavor (vanilla, coffee, hazelnut) or change the filling type. Your credits are returned. |
| "With those constraints we can't reach a balanced recipe…" | The advanced constraints don't allow every range to be met. | Loosen a constraint (for example, raise the max water) or try another combination. Your credits are returned. |
| Experimental combination notice in the result | The flavor isn't in the curated recipe library yet, and the recipe was fine-tuned with creative judgment. | Use it as a starting point and adjust it with your own tests before going into production. |
